Egg IntroductionEggs are a wonderful food. Eggs are a high quality source or protein with lots of vitamins and minerals for approximately 70 calories.
The nutrients in eggs can play a role in weight management, muscle strength, healthy pregnancy, brain function, eye health and more. There are one of only a handful of foods with naturally occuring Vitamin D. The yolk contains choline, a nutrient in the vitamin B family shown to be critical for memory and though processing. Not only are they nutritious, but extremely versatile and appear at all three meals. Although eggs have been vilified for their cholesterol content (about 200 mg), recent stufies have qqquestioned the link between dietary cholesterol and blood cholesterol. So unless your doctor advises you against high-cholesterol foods, don't worry about it. |
Egg Anatomy
There are 3 main components to an egg: the shell, the white and the yolk.
A small blood spot in the yolk is not harmful, nor does it mean you have a fertilized egg, but rather it is a small vein rupture. Blood spots are an indication of a fresher egg. The older the egg gets, the more diluted the blood spot becomes. If it bothers you, remove it with the tip of a knife. |
Egg whites are about 88 percent water and about 11 percent protein. The remaining 1 percent consists of minerals and carbohydrates. Therefore egg whites are basically comprised of gas bubbles separate from each other by very thing liquid-protein films. When you agitate of beat egg whites, the tightly wound protein molecules relax ans being to unfold and stretch. With continued beating, the stretch proteins begin to overlap, crating a long, elastic surface. This is also known as a "soft peak". Continue beating and the proteins further bond and envelop the air bubbles, trapping and separating them. Consequently, smaller, but more air bubbles are formed, known as a "stiff peak".
