Basic poached eggs

Make sure if you are making multiple poached eggs at once that each egg has plenty of room and when finished cooking, remove the eggs from the water in the same order as you placed them to avoid over-cooking. 

Ingredients

1 tsp salt (optional)
1 tsp white vinegar (optional)
2 eggs

Steps

1. Place at least 1" of water in a pan and bring to a just under a boil - do not let the water boil. 
   
2. Break one egg at a time into a small bowl and slip gently into the water .
   
3. Cook approximately 3-5 minutes watching carefully for the white to cook and yolk to just film over. Immediately remove the eggs with a slotted spoon and allow the water to completely drain. You may wish to place them on a paper towel for further draining before placing the eggs onto your bread or plate.
