Tomato Salad with Fresh Cheese and Basil
In the summertime cherry tomatoes really come into their own, becoming especially sweet and juicy. Roma tomatoes can seamlessly mix in with the cherry tomatoes as well, so feel free to work with what you have from the garden. This recipe takes advantage of any soft, mild cheese that you have on hand as well as the availability of summer herbs. If you have oregano, but not basil, that will work as well. Serves 2 large bowls of pasta.
Ingredients8 ounces of cherry tomatoes, quartered or Roma tomatoes chopped
1/2 tablespoon sugar 1/4 teaspoon salt 2 medium banana peppers 1 shallot or a few slices of purple onion, minced 6 basil leaves 8 ounces of fresh mozarella or creme fraiche (see cheese recipes) 4 tablesoons extra-virgin olive oil pepper 3 tablespoons pine nuts 4 oz of your preferred pasta; penne works well |
