Egg salad is the answer to many situations. Served between two slices of bread, it's a fantastic portable meal. Wheat, sour dough, French bread and pumpernickle are all wonderful choices. Toast light-colored bread choices and add a slice of purple onion, tomato and some leaves of lettuce. Avocado makes a great accompaniment. Wrap the egg salad in a tortilla or pita with a dash of mustard for extra zip makes a fun alternative. Piled onto a bed of luscious lettuce, it becomes an elegant salad for lunch, brunch or a starter. There are several delicious variations to show off your eggs. Here are a few of our favorite recipes.

Suddenly craving an egg salad sandwich! Add a little serrano or a dash of hot sauce to make it have a little zing. Yum!
